Herbed Parmesan Crisps
These are a family favorite...
Ingredients:
freshly shredded parmesan cheese
freshly (fine chopped) basil or your fresh herb of choice (cilantro works well too)
some freshly grated lemon and/or lime zest
fresh cracked pepper to taste
(use about 5 times the amount of parmesan as the basil and lemon peel/lime peel)
Instructions:
1. Integrate all ingredients together in a bowl.
2. Line baking sheet with parchment paper.
3. Drop tblsp. of mixture onto the sheet leaving at least 1.5 inches in between to allow for flattening
4. Bake at 300 degrees F for approx 5 minutes or until they start flattening and browning a bit.
5. Allow to cool/harden and remove from baking sheet.
6. Store in an air tight container.
Tips: --serve with salad or as a snack
–you can also “mold” them when they are still warm (carefully!) by baking larger diameter amounts then allowing them to finish cooling over the back of a bowl or other food-safe serving piece. Then you can actually serve the salad in the parmesan crisp bowl.
